Made in Japan – Hassun – Cedar Wood
We are pleased to introduce the “Hassun” tray, crafted in Japan from straight-grained Japanese cedar.
The Hassun is one of the utensils used in Kaiseki cuisine in the tea ceremony.
It is made from red cedar wood, and its name derives from the fact that it is a square tray with sides of one “hassun” (approximately 8 sun) in length.
The side boards rise vertically, and the corners are notched on the inside and gently bent into rounded form.
On one side of the rim, there is a decorative binding of cherry bark.
This tray is used to serve two to three varieties of delicacies from the mountains, sea, rivers, and village, in small portions, as a dish for exchanging cups between host and guest.
Although there are variations made of lacquerware, Ikkanbari (paper-lacquer), or ceramics, the most common and traditional form is this cedar Hassun, whose size and shape are largely standardized.
Because it is lightweight and made from natural materials, it may also be used creatively in other settings to provide an elegant presentation.
Before use, lightly wetting the surface of the wooden tray helps prevent stains and residue from adhering.

「八寸」是茶道中使用的怀石道具之一,以赤杉木地制作,由八寸见方的劈板托盘而得名。
侧面的木板垂直立起,四角内侧开有切口并弯曲成圆角,边缘一侧以樱皮进行装订。
通常盛放山珍海味、川味或乡野珍品等 2~3 种少量食材,作为主客之间互相献盏时的取肴器皿。
根据趣向,也有涂漆、一贯张、陶瓷制等器皿,但最为常见且标准化的就是这种「杉木八寸」,其尺寸与形状几乎固定。
由于材质真实且重量轻,除了传统用途之外,也或许可以在其他场景中作为时尚摆盘器具来发挥创意。
木地器皿在使用前先用清水润湿,可减少污渍附着。
