One of the key characteristics of a donabe is that it warms gradually over direct flame, allowing heat to penetrate slowly into the ingredients and bring out their natural sweetness and umami.
In addition to heat from the bottom, the clay contains far-infrared effects, which warm the rice from all directions inside the pot, ensuring that heat reaches the very core of each grain for a plump and perfectly finished texture.
